The Most Delicious Salad Recipe

I am a pescatarian (eat only seafood) and as a result have had to get creative on my veggies and salads. On the flip side, I also don’t want to spend hours assembling delicious food.  This is one of my “go to” recipes that always delivers an amazing and quick meal…

I keep particular ingredients always on hand so that when the mood strikes me I can make things fresh and quickly. Also some of these ingredients are great to have for entertaining purposes anyway (noted below).

Here’s what you’ll need for a salad that can feed 2 hungry people as a meal or 6 people as side dish.


  • 2 heads of Fresh Butter Lettuce (with the roots preferred – these are typically called ‘living lettuce’ or something similar)
  • 5 Mini Organic Cucumbers
  • 1 Jalepeno (if you like a bit of heat)
  • 2.5 oz Feta
  • 3 – 4 Hard Boiled Eggs (I use Pasture Raised Organic Eggs – better taste and healthier!)
  • 1 Medium Avocado
  • Roasted Japanese Yams (optional/ experimental ingredient – we happened to have some as leftovers)
  • 1/2 cup blueberries (optional ingredient – apples, strawberries, or dried figs are also great if you have them)
  • 2 Tbsp Balsamic Paste (I use the Trader Joe’s Balsamic Paste – this is usually also great for capreses or little crostinis with cheese)
  • 2 Tbsp Olive Oil

Other optional ingredients:

  • Roasted Potatoes (be sure to season before adding!)
  • Pasta (I love bowtie!)
  • Pearl Cous Cous (multi-color for a bit of fun)
  • Spanish Roasted Peanuts (especially good if you don’t include salty yams or potatoes – the salt is GREAT in the salad; these are also great to have on hand for entertaining purposes)
